Fr. Rich Broderick’s Third World Soup Sautee 2 medium onions, chopped, in 4 tablespoons butter. In pot combine: 2 cans tomato soup 6 cans water ¼ teaspoon pepper ¼ teaspoon cayenne pepper (try 1/8 first) 2/3 cup uncooked rice 2 tsp salt ½ cup chopped parsley (fresh if possible) 2 celery tops, chopped The onion from above. Bring to a boil. Simmer about 45 min or until rice is cooked and soup has thickened. Add two or three of the following choices while simmering: 1 cup cabbage 2 sliced carrots (best choice) 2 sliced celery, sliced thin (also a good addition) All three can be added for a very favorable soup. Add for color the last 15 min. of cooking: ½ -1 cup broccoli ½ -1 cup peas Recipe serves 6-8 very well. Recipe is easily doubled for the purpose of serving a large group. Enjoy & God Bless YOU!
